Cooking Diary #58: Kimchi Pajeon

I still had some leftover store bought preserved Kimchi after using them for Kimchi Jigae last Sunday. The leftovers were not enough to make another portion of Kimchi Jigae hence I used them for Kimchi Pajeon.

Kimchi Pajeon (adapted from Maangchi)

Kimchi Pajeon is also known as Kimchi Pancake. It is one of the snack foods that Koreans munch on with beer or soju. It could also be one of the main dishes in a meal. I think I didn’t use enough cooking oil for the sides to go crispy. Despite the soggy look, it tasted good. Mom who is a fussy eater agreed that it was good too.
